Tortilla Soup January 20, 2010

Tonight I made tortilla soup – funny thing was that I already had all the supplies on hand from stocking up when I find things on sale.  There is no exact recipe for this soup, it is just one of those throw things in the pot kind of things.   You can generally find ground beef on sale somewhere – canned goods, frozen veggies, and broth go on really good sales around the holidays (that is when I stocked up) but you can find them on sale all the time.  I will do my best to be as exact as possible on the recipe.

1 pound ground beef

1/2 onion chopped

1-2 clove garlic minced

1 can beef broth

1 can diced tomatoes

1 can Rotel (I prefer mild)

1 can sliced carrots drained

1 can green beans drained

1 cup or so frozen corn

1/2 large can black olives sliced

salt and pepper to taste

2 or so tablespoons chili pepper

2 teaspoons or so cumin

Brown beef in pot with onion then drain off fat.  Put all other ingredients in the pot and let simmer.  I like to let it simmer for an hour or more.  Serve with grated cheese and crushed tortilla chips on top.  Yummy!!!
