Fabulous, light, easy treats!

Filed under: Recipes — Detra @ 7:32 pm

This is one of my FAVORITE little treats.  They are so good and so easy to make!  They are cereal treats for grown ups (and kids that will eat dried cherries).  I clipped this out of a Cooking Light magazine a while back but was able to find it online HERE.  Since it is from Cooking Light, I don’t feel as guilty about eating them!!  Let me warn you, they are addicting – once you start eating them, it is SO hard to stop!

Ingredients

  • 1  cup  semisweet chocolate chips
  • 3/4  cup  white chocolate chips
  • 1 1/2  cups  oven-toasted rice cereal (such as Rice Krispies)
  • 3/4  cup  dried cherries (I had a coupon I found in a magazine for Craisins {dried cranberries}so last night when I made these I used cherry flavored Craisins – hubby liked them even better)
  • 1/3  cup  slivered almonds (I will usually put in a little more than this)
  • 1/2  teaspoon  vanilla

Preparation

Cover a large baking sheet with wax paper.

Place semisweet and white chocolate chips in a medium glass bowl; microwave at HIGH 45 seconds. Stir, and microwave an additional 45 seconds or until almost melted. Stir until smooth. Add cereal and remaining ingredients; stir quickly to combine. Drop mixture by tablespoonfuls onto prepared baking sheet; chill 1 hour or until firm.

Money Saving Tips

3 easy ways to save
money in 2010

Posted by Mercedes: Savvy Spender and Snack Mom

A new year brings hopes of new and better things for everyone. Here are three financial resolutions to keep that promise to benefit you all year long:

1. Be a Savvy Spender

As moms, we can make a big impact on how much we spend at the grocery store. Before you head out for the grocery store, get online and search for printable coupons for the items on your list. Make a habit of visiting the web sites that offer hundreds of printable grocery coupons: Snackpicks’ coupons page, Coupons.com, Smartsource and Redplum. There are also hundreds of other moms out there working to help you save money, too. Start reading money-savings blogs like mine. I match those printable coupons with any current sales available to help you maximize your savings.

2. Save Smart

Saving money on your everyday expenses is a great resolution. But it’s even better when you translate those savings into money in your bank account. Create a savings account today. It’s really easy. Starting with $25 automatically deducted from your paycheck every pay period. Putting your savings on auto-pilot helps you stick to this resolution. Use this strategy to start funding an emergency fund, vacation fund or your child’s college fund. Periodically revise the amount of money you are saving and consider increasing it as you can afford.

3. Make Money, Money

Making more money can be as easy as getting rid of stuff you no longer need or use. If you have a lot of clothes your family has outgrown, you can easily turn that into money by selling it on Ebay, Craigslist, or through a consignment shop. Holding a garage sale is a great way to get rid of any extra stuff cluttering your home or that’s been in storage for too long. Other ways for earning some extra cash include: monetize a hobby, give classes on a subject where you are the expert, mystery shop, babysit or petsit for friends.

Being creative and learning new skills- like such as using coupons while you shop- can go a long way in helping you achieve the financial goals you set for your family throughout the year, and for many years to come.

White Chili

Filed under: Recipes — Detra @ 6:28 pm

Okay, this is one of those recipes that I am known for – my white chili!  I started with a recipe given to me from a friend and then made it my own.  Here is my version:

White Chili

Ingredients:

Cooking spray

2 cloves garlic, minced

1/2 cup chopped onion – I had kids going crazy tonight while I was making it and I totally forgot about the onions and it still turned out great

2 cooked chicken breast halves, diced and/or shredded – I like to do a little bit of both

3 cans (16 oz. each) Great Northern beans, drained and rinsed (I like to smash some of them to make it more of a chili consistency)

1 large can (7 oz.) green chiles

1 1/2 cups chicken broth

1 can (16 oz.) diced tomatoes, undrained

1 Tbsp. Worcestershire sauce

2 Tbsp. chili powder – I prefer Tone’s chili powder (I always get the giant size at Sam’s) – some chili powders have almost a sweetness to them which I don’t like, Tone’s does not

1 tsp. (to 1 Tbsp.) cumin

salt and pepper to taste

Directions:

1. Spray Dutch oven with cooking spray – saute onions and garlic until onions are clear.

2. Add remaining ingredients and cook on medium heat for 45 minutes, stirring occasionally.

The boys and I like to eat our chili with Fritos and cheese.  My husband likes crackers and hot sauce in his.  To each his own.

Cuisinart DLC-2007 Food Processor, 7-Cup Prep 7

Saw this at Macy’s yesterday and thought I would pass it along.  This 7 cup Cuisinart Food processor is regularly $159.99 but until Sunday or until the supply runs out, it is $79.99!  I personally have a Kitchen Aid one but this one looks extremely nice and heavy duty – it is larger than mine which really makes me want to get it!  Check it HERE out if you are need of one.
