BBQ Buffalo Wings

So what man doesn’t love buffalo wings, but wow they can be expensive!  My husband craves them all the time but it just kills me to shell out the money to get them at a restaurant.  SO, he has started making his own and he loves them.  I have asked him to share them with you so here is my first guest post – by my hubby!  Note that he purchased a package of wings that had been marked down at the store with the tag that says use or freeze by today (another way to save money on meat). 

Over the last year or so I had tried several different wing recipes from the internet but none of them seemed to be exactly what I wanted. I finally decided to sit down and take bits and pieces from different recipes and combine them to make my own recipe. I really like the hotness of traditional wings, but I also like the sweetness of BBQ wings….. so, I decided to combine the two. Another nice thing about this recipe is that you should have all of the ingredients already so you don’t have to purchase a lot of extras. I will also tell you that I like to bake my wings  rather than fry them.

Start by cutting the wing pieces into the “drummets”. This involves cutting the tip off of the wing at the last joint and discarding it, and then separating the remaining wing at the joint where the wing bends. When you are finished you will have a piece that looks like a tiny drumstick and another piece that is slender with two bones. So each full wing that you start with makes two traditional buffalo wings to cook with.

Once you have all of your wings separated, pat them dry with paper towels and set them aside for a few minutes to get the cooking rack ready. I use a cooling rack stacked on top of a jelly roll pan so that it suspends the wings and allows the excess grease to drip down. Place the wing sections out on the rack, prepare the spices and sauces and preheat the oven to 400 degrees.

Season both sides of the wings with equal parts cayenne pepper, garlic powder, and onion powder. I don’t use a lot at this point because I rely more on the seasonings in the sauces. Before placing the wings in the oven use a basting brush and baste each wing with your favorite brand of Tabasco sauce. Bake the wings for 20 minutes. Then flip the wings, baste again with Tabasco sauce, and cook for another 20 minutes. This really gets the sauce baked into the meat. While the wings are baking combine these ingredients for the spicy BBQ Buffalo sauce:

1 cup BBQ sauce

1/4 cup Tabasco sauce

1/4 cup honey

2 tablespoons butter (melted)

1/4 teaspoon cayenne pepper

When the wings are done cooking baste one side of the wings with the Spicy BBQ Buffalo sauce and bake for an additional 5-7 minutes. Flip the wings, baste again, and cook for another 5-7 minutes. These wings are sweet, spicy and VERY messy…..but quite delicious and well worth the effort!!!

Keep an eye out for clearance deals on value size/packs at Target.  They have started to reduce these items.  They range from 15-50% off.  I snagged a 30 count box of oatmeal yesterday for $4.88 and a huge pack of Quilted Northern toilet paper for $13.54 – plus had the $1 off coupon from Target.com for it.  They were located in the seasonal area of the store – where you find the Christmas trees at Christmas time.

Cinnamon Belgian Waffles

 This morning I felt like trying a new waffle recipes.  I doubled the recipe just so I would have some to freeze  (my oldest loves to have waffles or pancakes in the morning before school – freezing them makes that possible).  These were very yummy.  They tasted just like French toast!  And yes, those are farm animal waffles – I love my farm waffle maker.  I also made sausage links for the boys – they love Lil’ Sizzlers sausage and it is on sale this week for $1 a box at Reasors!  I stocked up – the cheapest I can normally find it is $1.77!

Ingredients

  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/4 cup butter, melted
  • 1 cup all-purpose flour (I needed 2 cups since I doubled it – I used 3/4 cup wheat flour and the rest all-purpose)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 tablespoon white sugar
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 pinch ground cinnamon (I used 1 teaspoon)

Directions

  1. Preheat your waffle iron.
  2. In a medium bowl, whisk together the eggs, vanilla, buttermilk and butter until well blended. Combine the flour, baking powder, baking soda, sugar, salt and cinnamon; stir into the buttermilk mixture. In a separate bowl, whip the egg whites with an electric mixer until stiff. Fold into the batter.
  3. Spoon batter onto the hot waffle iron, close, and cook until golden brown. Waffles are usually done when the steam subsides.
 

Pizza and salad

Last night for dinner, I made a pizza from scratch and also prepared salads for everyone.  The pizza crust is below.  For the sauce, I spread 1 can of tomato paste ($0.50 – used Contadina coupon for $0.75 off 3) on the rolled out crust and then sprinkled it with salt, pepper, Italian seasoning, ground oregano, and freshly crushed garlic.  Then I topped it with deli turkey crumbled up (Sara Lee Mesquite Turkey – around $7 a pound – used about 1/4 of a pound) on all of it and then made special parts for me and the hubby with turkey pepperoni ($2.78 and had $0.55 coupon from the paper) and green chiles ($0.67 for the store brand) – then topped all of it with mozzarella cheese.  After it had cooked for about 15 minutes, I topped it with some crumbled feta cheese ($1.73 for Alouette brand – used maybe half of the container).  We love this pizza, however, I would like to find a better crust recipe and one of these days, I want to make a better sauce too.  For now, this is quick and easy so it is what I use.

Ingredients

  • 1 (.25 ounce) package active dry yeast (I use rapid rise yeast to speed it up)
  • 1 teaspoon white sugar
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 1/2 cups bread flour (I use half wheat flour and half unbleached all-purpose flour)
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Directions

  1. Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  2. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
  3. Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker’s peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.
